POSITION SUMMARY:
The Sushi Restaurant Manager will play a pivotal role in upholding the exceptional standards of Rokka's Sushi. The ideal candidate will possess a deep understanding of Japanese cuisine, particularly sushi preparation techniques, and have a proven track record in managing a high-end dining establishment. The Sushi Restaurant Manager will be responsible for overseeing all aspects of the restaurant's operations, from ensuring the quality and presentation of dishes to managing staff and enhancing the overall customer experience.

RESPONSIBILITIES:
- Ensuring the sushi restaurant operates efficiently and complies with health and safety standards specific to raw seafood handling.
- Overseeing the preparation, quality, and presentation of sushi dishes to maintain consistency and uphold the restaurant's reputation
- Coordinating the sourcing of fresh, high-quality fish and other ingredients from trusted suppliers.
- Managing necessary and specialized equipment.
- Hiring and training servers knowledgeable about sushi culture and etiquette.
- Creating schedules to ensure adequate staffing during lunch, dinner, and omakase (chef's choice) service times.
- Fostering collaboration between the sushi chefs and kitchen team for seamless operations.
- Educating customers on sushi etiquette, menu offerings, and traditional pairings like sake or tea.
- Ensuring exceptional service during omakase experiences, which often require direct interaction between chefs and diners.
- Handling customer feedback about taste preferences, dietary restrictions, and complaints gracefully.
- Highlighting unique menu items through social media and promotions.
- Partnering with local seafood markets or cultural events to enhance the restaurant's community presence.
- Following up with Doordash, Uber and Grubhub creating offers and promotions to increase the restaurant visibility and profit
- Keeping up with sushi trends (e.g., vegan sushi options, fusion styles) to innovate the menu.
- Planning seasonal menu updates based on available fish and customer preferences.
- Quickly resolving issues such as delays in seafood deliveries or equipment malfunctions.
- Addressing challenges in maintaining ingredient freshness due to fluctuating demand.
- Ensuring consistency and precision in the intricate art of sushi-making.

QUALIFICATIONS:
- Bachelor's Degree in Hospitality Management, Business Administration, or a related field (preferred but not always required).
- Certification in Food Safety and Hygiene (e.g., ServSafe) with a focus on handling raw seafood.
- Previous Experience (3+ years) in restaurant management, preferably in a sushi or Japanese cuisine establishment.
- Knowledge of sushi preparation techniques and Japanese dining culture is highly desirable.
- Proven track record in customer service and staff management.
- Preferable knowledge of: Portuguese, Spanish and English.
COMPENSATION & BENEFITS:
Annual Salary: $42,000 - $54,000 based on experience and achievement
Bonus: To be negotiated
